Why the Chia Seeds and Strawberries?

Chia Pudding can be a great breakfast or dessert. After making it several days in a row, all I can say is that this meal is absolutely delicious, and it can keep you hydrated on a hot day. More importantly, it is super healthy. Also, you don’t have to bake anything here, which is a huge plus for a hot season too.

You can get your hands on all ingredients relatively easy. Except for, maybe, chia seeds. You might have to order them online or find them in your local vegan grocery store. Yes, they are heavily associated with vegan food. But don’t let it turn you away because chia seeds contain a high amount of protein, omega-3 fatty acids, and natural calcium, not to mention many other potent nutrients. 

As for the strawberries, they just make the meal taste amazing by adding to it a nice refreshing flavor. The pudding is not overly sweetened and can easily become your regular breakfast or post-workout snack. Moreover, some recipes suggest adding maple syrup or honey to make it taste even more like a sweet dessert. So, everybody will enjoy it.

Ingredients

This list is for a single glass of pudding. Feel free to adjust it to as many yields as you need.

  • 6 strawberries
  • 6 tablespoons chia seeds
  • ½ cup milk
  • ½ cup soy yogurt or plain Greek yogurt
  • 1 teaspoon vanilla

Instructions

  1. Wash and hull the strawberries;
  2. Mix hulled strawberries, milk, yogurt, and vanilla in a blender;
  3. Pour the blended mixture into a medium bowl and whisk in the chia seeds;
  4. Let it stand for half an hour;
  5. Stir lightly if the seeds have settled until they are evenly distributed;
  6. Cover and refrigerate overnight or for 6-8 hours;
  7. Serve in a glass with your favorite toppings.

For the topping, feel free to use any fruit you like. Personally, I prefer strawberries, raspberries, and banana slices.
If you don’t have a blender, you can use a whisk to mix all ingredients in a bowl instead.
The soy or Greek yogurt can be changed with the cow milk. However, the consistency might be a bit off then.
